Method 1:

Preparing Delicious Egusi (Melon Seed) Soup

 Materials for cooking melon known as Egwusi soup in Igbo land.

1. Pot, the quality of your soup determine the side of your pot.

2. Water

3. Ugba

4. Maggi

5.meat

6 crayfish

7.vegtable

8 .pepper

9. Salt,

10. Oil

11 .Gas or stove or fire wood or any source of light you can use to cook your soup.

Procedure.

Step 1, watch your meat and stem, to your taste.

Step2,  use little warm water and mix your Egwusi very well

Step 3, put water in the put and connect to power source that is gas any source you want to use and cook, when it is boiling

Step 4, put the mixed melon in the pot. Note if you want your soup  to have seed(mkpuru) do not turn until it boils up to 5- 10 minutes before turning and adding everything thing you are using to cook except vegetables

Step 5, add vegetables turn , check salt, bring down and enjoy your meal.


Method 2:

Preparing Delicious Egusi (Melon Seed) Soup

Ingredients:

1 cup of ground melon seeds

4 cups of water

2 cups of chopped vegetables (such as spinach, pumpkin, or bitter leaves)

1 pound of meat or fish (such as beef, chicken, or tilapia)

2 tablespoons of palm oil

1 onion, finely chopped

2 cloves of garlic, minced

2 teaspoons of ground pepper

Salt, to taste

Optional: 1 habanero pepper (or to taste)

Instructions:

Bring 4 cups of water to a boil in a large pot.

Add the meat or fish and a pinch of salt, and cook until the meat is tender.

Remove the meat or fish from the pot and set it aside. Reserve the stock.

Heat the palm oil in a separate pan over medium heat.

Add the onion and garlic and sauté until the onion is translucent.

Add the ground pepper and habanero pepper (if using) and stir for a few seconds.

Stir in the ground melon seeds and sauté for a few minutes, until the melon seeds start to release their oils.

Slowly add the reserved stock from the meat or fish to the pan with the melon seed mixture. Stir well to combine.

Add the meat or fish back to the pot.

Add the vegetables and continue cooking the soup until the vegetables are tender.

Add salt to taste.

Serve the soup with rice or fufu.

Please keep in mind that ingredients can vary based on your preference and what's locally available for you, You can add more or less ingredients to adjust the recipe to your own taste.

You can also use blended tomatoes or blended pepper for additional taste, experiment with different vegetable and meats to see which one you prefer.
